BALMAADI ESTATE GROWS COFFEE IN THE MIDST OF A RICHLY BIO-DIVERSE PIECE OF LAND. THE ESTATE AND THE FOREST MERGE WITH ONE ANOTHER, MAKING THE PLANTATION HOME TO BISON, SAMBA, ELEPHANTS, TIGER MONKEYS & A HOST OF BIRDS.

 

THE COFFEE IS SHADE-GROWN UNDER THE TALL CANOPY OF THE NATIVE SHOLA TREES AND EFFORTS ARE MADE EVERY YEAR TO EXPAND ON THE FAUNA OF THE ESTATE. THE BUSHES ARE CULTIVATED AT AN ALTITUDE OF 4000-6000 FEET; A HIGHER ALTITUDE THAN MOST COFFEE PLANTATIONS. THE SOIL REMAINS UNSPOILT AND BIO-DYNAMIC METHODS OF AGRICULTURE ARE PRACTICED TO KEEP THE LAND FERTILE & RICH.

AT HARVEST TIME, CARE IS TAKEN BY EACH AND EVERY MEMBER OF THE PICKING TEAMS TO PLUCK ONLY THE RIPEST CHERRIES - SELECTIVE HARVESTING, AS IT IS CALLED, WHICH REQUIRES SEVERAL ROUNDS OF PICKING TO GET THE FRUIT ONLY WHEN IT IS JUST RIGHT. THE CHERRIES ARE HAND PICKED, PULPED, FERMENTED, WASHED & SUN-DRIED WITHOUT ANY CHEMICAL INTERFERENCE.

 

THE RESULTING COFFEE IS ONE THAT IS NATURALLY SWEET, BALANCING OUT A DESIRED TART ACIDITY. THE FLORAL NOTES THAT ARE A DIRECT INFLUENCE OF THE SURROUNDINGS GIVE A CUP A UNIQUE FLAVOUR. WE HAVE CREATED A MEDIUM ROAST TO BRING OUT THESE SPECIAL CHARACTERISTICS OF THIS HIGH ALTITUDE COFFEE GROWN IN THE NILGIRIS.
