THE PLANT GOES THROUGH A PROCESS CALLED PHOTOPERIODISM WHICH REQUIRES PERIODS OF DARKNESS FOR THE BRACTS TO CHANGE FROM GREEN TO RED. ONCE THIS CHANGE IN COLOUR HAS TAKEN PLACE, SUNLIGHT DOES THE REST. THE MORE SUNLIGHT THE PLANT RECEIVES, THE BRIGHTER THE RED. POINSETTIAS ARE USUALLY AT THEIR BRIGHTEST RED DURING THE 3RD WEEK OF DECEMBER

THIS ATTENTION TO GROWING DETAIL IS NOT UNCOMMON IN THE COFFEE WORLD. IDEAL GROWING CONDITIONS WITH SHADE, SUNLIGHT, RAIN & SOIL RESULT IN CHERRIES OF A PARTICULAR QUALITY. WHEN THE CHERRIES RIPEN, COFFEE GROWERS WILL SPEND TIME TRAINING THEIR CHERRY PICKERS TO IDENTIFY THE EXACT SHADE OF RED AT WHICH THE CHERRIES SHOULD BE PICKED. THIS PROCESS OF SELECTIVE HARVESTING IS WHAT  MAKES THE BEAN WE HAVE USED FOR OUR BLEND SO SPECIAL.
