A washed-rind cheese comes with a lot of character. True to its name, the ageing process of the cheese requires for the rind to be “washed” in order to encourage the growth of certain molds on the surface. This results in a bold, somewhat funky & strong-smelling cheese. The puck gets more liquid and gooey on the inside as it ages.
